Recipe for Asian Red Cabbage Coleslaw

Recipe for Asian Red Cabbage Coleslaw: Nourish Yourself Nutritionally as often as possible with Life Enhancing Foods.

A big thank you to Keltie Barbutza for sharing a favorite salad recipe that she enjoys making often.

Ingredients:

1/4 small red cabbage

2 cups finely chopped broccoli

1 1/2 cups julienned or grated carrots

1/2 cup raisins or chopped dates

1/4 cup pumpkin seeds

1 cup shelled edamame beans

Dressing:

3 tbsp maple syrup

1/4 cup olive oil

1/8 cup balsamic vinegar

1/8 cup rice vinegar

1 tbsp low sodium soy sauce

1 tbsp sesame oil

1 inch peeled ginger

1 clove garlic

Instructions:

Mix all ingredients up to and including the edamame beans in a salad bowl. Blend the remaining ingredients in a food processor to make the dressing. Serve immediately, or if marinating, add the raisins or dates just before serving.
